Bouncy Rice Cooker Cheesecake

8 oz package of Cream Cheese (generic or Horizon)
4 oz Goat Cheese plain
3 Eggs room temperature
4 Tbl Sugar
1 Tbl Corn Starch
optional ½ tsp mace (mace is similar to nutmeg)
butter

optional
Green Tea version:
add 1 1/2 Tbls Matcha
Or you can add also ½ tsp vanilla and 2 tsp lemon juice for Plain version

  1.  If your ingredients aren't room temperature, you can try microwaving briefly, (less than 10 sec for eggs out of shell). Remove foil from cream cheese before nuking. 
  2. Separate your yolks from your whites- don't get any yolk into the whites! With an electric beater whip egg whites with 2 tbl sugar electric beater until stiff peaks form. About 4-5 minutes appx.
  3. In a separate bowl beat your cream cheese, yolks, goat cheese, corn starch, 2 Tbl sugar. I add mace and matcha but it tastes fine without. You may want to add more sugar- taste and see. The goat cheese will add body and make the cheesecake less gummy. The corn starch prevents the cheesecake from cracking. 
  4. Fold the egg whites into the cream cheese mix. Place in rice cooker. I like to butter my rice cooker as it will brown the edges. Get cooking! Depending on your rice cooker you may need to go 3 cycles of cooking. The outside edges cook first, it will puff up and you want the middle to be solid. It is surprisingly forgiving about the cook times. I've doubled the recipe, too, but that will need a longer cook time and it is more likely to collapse.


Recipe Notes: some versions of this Japanese cheesecake add 1/2 c cream and 3/4c pancake mix- I stay away from wheat and found this works fine without it. 

Anecdote: My oven wasn't working for a year as I was torn between repairing it or buying a new one as the price was so similar. I liked the challenge of how to cook without a stove which also coincidentally happened to go well with my switching to a Keto diet.  I learned new ways to cook as a result, how to iron grilled cheese cloud bread sandwiches, make quiches with almond milk, etc. Lost 50 lbs - who knew you had to eat fat to lose fat? And I did end up repairing the stove myself - new igniter, thank you, youtube.
