poached
  1. fill a pan with 1 inch of water
  2. add salt and about a tbsp of vinegar
  3. set to medium-high heat
  4. crack egg into a ramekin
  5. (optional) strain egg with sieve
  6. when water comes to a simmer, pour egg into center of pan
  7. turn off heat once egg is in the pan
  8. cook for 2-3 minutes
  9. salt and serve with mayo or on toast
soft boiled
  1. fill pot with water
  2. bring water to a boil under medium-high heat
  3. boil egg for 6 1/2 minutes
