Eleven Madison Park Granola

DRIED
  • 2 3/4 cup rolled oats
  • 1 cup shelled pistachios
  • 1 cup unsweetened coconut chips
  • 1/3 cup pumpkin seeds
  • 1 cup almonds (optional)
  • 1 tbsp kosher salt (can do less)
  • 3/4 cup dried sour cherries

LIQUID
  • 1/3 cup extra virgin olive oil
  • 1/3 cup maple syrup
  • 1/2 cup light brown sugar (can replace w more maple syrup if you want less sugar)


  1. Preheat oven to 300
  2. Mix together...
    • 2 3/4 cup rolled oats
    • 1 cup shelled pistachios
    • 1 cup unsweetened coconut chips
    • 1/3 cup pumpkin seeds
    • 1 cup almonds (optional)
    • 1 tbsp kosher salt (can do less)
  3. In a small saucepan over low heat, warm 1/3 cup EVOO, 1/3 cup maple syrup, 1/2 cup brown sugar until sugar dissolves. Fold into dry mix.
  4. Spread granola on baking sheets, and bake until lightly golden (~40 min). Stir granola along the wway
  5. Remove granola, let cool. Add in 3/4 cup dried cherries.
Keeps at room temperature.
