- Preheat oven to 300
- Mix together...
- 2 3/4 cup rolled oats
- 1 cup shelled pistachios
- 1 cup unsweetened coconut chips
- 1/3 cup pumpkin seeds
- 1 cup almonds (optional)
- 1 tbsp kosher salt (can do less)
- In a small saucepan over low heat, warm 1/3 cup EVOO, 1/3 cup maple syrup, 1/2 cup brown sugar until sugar dissolves. Fold into dry mix.
- Spread granola on baking sheets, and bake until lightly golden (~40 min). Stir granola along the wway
- Remove granola, let cool. Add in 3/4 cup dried cherries.
Keeps at room temperature.
