Prep Time
Ingredients
lemon
long pasta
cream
butter
parmesan (optional)
salt + pepper to taste
Preparation
salt and heat a pot of water, add pasta when water comes to a boil
zest half a lemon into medium pan
pour enough cream to cover bottom of pan (around 1/4th cup)
turn stove to medium-high heat and stir often
when cream comes to a simmer add 1-2 tbsp butter
stir until completely emulsified, then move to low heat
(optional) add parmesan, stir until melted
add around 1/4th cup of pasta water to pan
add pasta to pan
cook until sauce is desired consistency
juice half a lemon into pan and mix
salt and pepper to taste, serve with parmesan and lemon zest on top
