Proja (Cornbread)
Ingredients
1 1/3 cups all purpose flour
1 1/3 cups corn flour
4 whole eggs
2 cups milk (I used almond milk)
2/3 cup extra virgin olive oil
1 tbsp baking soda
200 grams crumbled feta, you can also mix in another cheese such as parmesan, blue cheese, gorgonzola
basil, swiss chard, or baby spinach leaves
.5 to 1 tablespoon salt
Preparation
Set Up
One small glass baking dish (8" x 4") or a muffin sheet
Prep
Preheat oven to 350 degrees
Mix all the ingredients in one bowl
Prepare the baking pan – oil the pan with the oil and then put it in the oven (with nothing inside of it other than the oil).
Carefully with oven mitts, remove the dish and pour the ingredient mixture into the hot oil pan. You'll know the oan is hot enough if it starts steaming. Use a spatula to clear off the edges. The batter should be thicker than crepe batter. Place the dish back into the oven.
Bake for 30 minutes. If it's not golden brown, cook for a maximum of 40 minutes.
