Summer Rolls

  • Summer roll wrappers
  • Vermicelli noodles
  • One box of firm tofu, cut into 12 skinny pieces and fried
  • 12 large shrimp, boiled and cut in half
  • Romaine or some other leafy green
  • Eggs, scrambled (optional)
  • Mint (optional if you don't like minty stuff like me, but required if you're feeding guests)

Sauce:
  • 1 cup of hoisin sauce
  • 1/2 cup of peanut butter
  • a lil water
  • a lil sugar

Sauce:
Mix ingredients over low heat until combined and and saucy but not too saucy.
